Mandarin Peanut Rice Salad

  • 1 can (15 ounces) mandarin oranges, drained
    Canned and Jarred
  • 2 cups cooked rice
    Pasta and Rice
  • 2 cups chopped green onions
  • Leaf lettuce
  • 1 cup mayonnaise
  • Salt and pepper to taste
    Spices and Seasonings
  • 1 cup salted peanuts
    Nuts;Savory Snacks


  • In a bowl, combine the rice, onions, oranges, peanuts, mayonnaise, salt and pepper; mix well. Cover and refrigerate for at least 1 hour.
  • Serve in a lettuce-lined bowl if desired.
