  • 2 (19-ounce) cans black beans, rinsed and drained

  • 1 teaspoon lime juice

Steps

  • In a skillet, heat 1 tablespoons olive oil over medium heat.
  • Add onion, red pepper and saute until soft.
  • Add garlic, jalapeno and cumin.
  • Saute for an additional 2 minutes.For the cakes: in the bowl of a food processor,combine, the black beans and salsa. Pulse until chopped but not puree.
  • Transfer the mixture into a large bowl.
  • Add ½ cup of breadcrumbs, the saute vegetables, green onions, cilantro and salt and pepper.Refrigerated for about ½ hour
  • Divide mixture into 6 equal portions. Dregde the patties in the remaining breadcrumbs.
  • Heat 1 tablespoon olive oil in a nonstick skillet over medium heat.
  • Add the cakes and cook for 4 minutes per side. Repeat with the remaining patties.For the Cilantro-lime sour cream sauce, gently stir all the ingredients together.
