Chicken in mushroom sauce

Ingredients

  • 2 tablespoons butter

  • 3/4 cup chicken broth
    Canned and Jarred
  • 1/4 cup flour for dredging, plus 1-3 tablespoons flour, depending on how thick you want the sauce

Steps

  • Between two pieces of plastic wrap, use a mallet pound the chicken thin to 1/2-inch thickness. (Don't have a mallet, slice them thin or use a heavy skillet.) Season the chicken on both sides with salt and pepper.
  • Place the 1/4 cup of flour into a shallow dish and dredge the chicken in the flour, shaking off the excess. Melt the butter in a heavy bottomed pot.
  • Add the chicken in a single layer to the bottom and cook each side for about three minutes.
  • Remove the chicken from the pot and set aside.
  • Add mushrooms, shallot and garlic to the pot and saute until the mushrooms soften and reduce in size, about five minutes.
  • Add chicken broth and red wine, scraping the bottom of the pot with a wooden spoon. Allow the liquid to reduce slightly, cooking for about two minutes.Ladle out some of the liquid into a separate container, and then add the flour, one tablespoon at a time. Use a fork or whisk to combine the liquid and flour until smooth after each addition.
  • Pour the slurry back in the pot and stir to mix. Turn off the heat and let the sauce sit for five minutes to allow it to thicken further.
  • Serve the chicken with the sauce on top.
