4 cloves garlic, minced
Grated pecorino romano or parmesan cheese for serving
1 pound rotini pasta
Pasta and Rice
6 bell peppers (red, orange and yellow combination), sliced
Cook pasta according to package directions.
Heat the olive oil over medium heat in a large skillet and add the garlic and crushed red pepper.
Saute for about 1 minute or until fragrant.
Add the pepper slices to the skillet and reduce heat to medium-low.After 15 minutes, add the basil and continue to cook the peppers until soft - about 5 more minutes.Toss the pasta with the peppers and oil with the pasta and serve with grated cheese.
