Ingredients

  • 1 (2 lb.) rack pork spare ribs or baby back ribs

Steps

  • Line a roasting pan with foil and fit it with a roasting rack.If your butcher hasnt removed it, remove the thin white membrane off the bone side of the ribs: run a pairing knife down the long way of the ribs to score the membrane, then grab it with a paper towel and pull down.In a small bowl, mix together the rub ingredients. Apply half the rub on each side of the ribs, working it in with your hands until well-coated.
  • Place the ribs on the rack, bone side down. Refrigerate at least 1 hour to allow flavors to penetrate.Preheat oven to 250 degrees F.
  • Bake the ribs 4 hours (baby back) or 5 hours (spare ribs), uncovered, rotating the pan every hour to ensure even cooking.Switch oven to broil. Broil 3-5 minutes to caramelize the sugar in the rub. Watch the ribs closely to make sure they don't burn.
  • Remove the ribs from the oven and place on a cutting board, meat side down (they're easier to cut this way). Allow to rest 10 minutes, loosely covered with foil, then slice into individual ribs and serve.
