Peach Tomato Caprese Salad

Ingredients

  • 1 tablespoon balsamic vinegar

  • 2 tablespoon extra virgin olive oil

  • 2-3 fresh basil leaves, sliced

  • ½ cup mix of heirloom grape and cherry tomato

  • ¼ teaspoon ground black pepper

  • 2-3 heirloom tomatoes, sliced

  • ½ teaspoon kosher salt

  • 8-10 small fresh mozzarella cheese balls

  • ¼ cup of red onion sliced and slices quartered

  • 2 peaches pitted, sliced and slices cut in half

Steps

  • On a serving platter place sliced tomatoes.Then evenly space onion, grape/cherry tomatoes mix, peaches, and mozzarella over top.Sprinkle with salt and pepper
  • In a small bowl whisk together extra virgin olive oil and balsamic vinegar.
  • Drizzle olive oil mix over top of salad.
  • Place basil evenly over top.
  • Serve and Enjoy.
